BEEF

Cattle are designed by nature to graze and thrive on grasses and forages. The pasture environment we provide means healthier animals and better tasting meat. All beef at Royer Farm is 100% grassfed and finished. Our animals live in a clean, spacious, low-stress setting so they can grow naturally without hormones or routine antibiotic use. A local (two miles from the farm) health-inspected, family-owned butcher shop, Paxton Custom Meats, cuts and wraps all the beef by hand. The beef is dry-aged at least 12 days to maximize tenderness and flavor. At Royer Farm we strive to be good stewards of the land. Our farm’s pasture environment reduces soil erosion, helps maintain water quality, and provides habitat for our livestock and abundant wildlife. Our farm has been in the family for 143 years and Scott and Nikki are proud to continue the tradition of raising wholesome, natural meats.

An eighth of a beef is a super option for those with limited freezer space, smaller appetites or wanting to budget food purchases in smaller installments. The 40 pounds of beef comes in two brown paper grocery sacks and will fit in the freezer portion of a standard refrigerator with room to spare. There is a great variety of about eight pounds of steaks (ribeye, NY strip, filet, sirloin, round and cube), roasts (chuck, arm, rump and sirloin tip) of around 9 pounds, ground beef weighing ~ 20 pounds (at least 90% lean) and about 3 pounds of beef stew meat. The cost is $325.

A half beef provides 160 pounds of meat and is $1175. This combination of steaks, roasts and ground beef works great for larger families and those feeding teenagers! The beef will come in 7-8 brown paper grocery sacks and fill a seven-eight cubic foot freezer (about the size of a large clothes washer). There will be 32 pounds of steak (ribeye, NY Strip, filet, sirloin, flank, skirt, flat iron, tri-tip, round and cube), 34 pounds of roast (chuck, arm, rump and sirloin tip), 64 pounds of ground beef (at least 90% lean), 10 pounds of beef patties and 20 pounds of specialty cuts (brisket, short rib and stew beef). Please note since the meat is cut by hand all weights are close approximations.

A quarter beef contains a mixture of steaks, roasts and ground beef. It fits in four brown paper grocery sacks and fills around 3.5-4 cubic feet of freezer space. This amount of beef usually feeds a family of two adults and two tween age kids for 10-14 months. Your quarter beef will be eighty pounds and be $600. It will consist of ~16 pounds of steak (ribeye, NY strip, filet, sirloin, flank, skirt, flat iron, round and cube), ~17 pounds of roast (chuck, arm, rump and sirloin tip), ~32 pounds ground beef (at least 90% lean), ~5 pounds of beef patties and ~10 pounds of specialty cuts (brisket, short rib and stew beef).
