PORK

At Royer Farm all our pork is raised with room to run, rest in the sun and dig in the dirt. This means they can grow naturally without hormones or routine antibiotic use. Our Berkshire pork is the ultimate in flavor, juiceness and tenderness. A local (two miles from the farm) health-inspected, family-owned butcher shop, Paxton Custom Meats, cuts and wraps all the pork by hand. All the chops, roasts, ribs, bacon, sausages and bratwursts are free of MSG and nitrates. Our farm has been in the family for 146 years and Scott and Nikki are proud to continue the tradition of raising wholesome, natural meats.

A half of a hog provides a great variety in 60-70 pounds of meat. It will fill three brown grocery sacks and costs $6.25 per pound. 65 pounds would cost $406.25. There will be about 8 pounds of chops (both bone-in pork chops and boneless butterfly) cut at ¾” inch thick, around 13 pounds of shoulder roast (great for pulled pork or slow cooker recipes), ~ 5 pounds of ribs (both spare and country style), a very tasty ~1# tenderloin, six pounds of naturally-cured bacon and at least a pound of sirloin cutlets or roast. Your remaining 30-35 pounds will be ham and ground pork products. You can have up to 18 pounds of ham (choose between hams weighing 2 up to 5 pounds). If you want less ham and more ground pork, let us know. Mix and match the following ground pork choices: breakfast sausage patties, unseasoned ground pork, bratwurst and Italian sausages.  July 1st will start taking deposits for early 2021 pick up/delivery..

A whole hog yields 120-140 pounds of pork and fills six brown grocery sacks. The cost is $6.25 per pound and this includes cutting, wrapping, seasoning and curing. 130 pounds of meat would be $812.50. Both bone-in and boneless chops at ¾” will total about 16 pounds. For the slow cooker or pulled pork there is ~26 pounds of pork shoulder (boston butt and picnic); some of these roasts can be used for ground pork if you prefer. Around 10 pounds of ribs (both spare and country style), two delectable tenderloins at ~1# each, twelve pounds of naturally-cured bacon and at least two pounds of sirloin cutlets or roast are also included. Your remaining 60-70 pounds will be ham and ground pork products. You can have up to 36 pounds of ham (with you choosing weights between 2-5 pounds). If you want more ground pork and less ham, just let us know. The ground pork products of: breakfast sausage patties, unseasoned ground pork, bratwurst and Italian sausages can be mixed and matched to your taste. Starting July 1st will take deposits for early 2021 delivery.
